Pumpkin Pancakes

PUMPKIN PANCAKES 
2 cups Buttermilk Pancake Mix 2 tablespoons brown sugar 1 1/2 teaspoons pumpkin pie spice 11/4 cups cold water 1/2 cup canned pumpkin In medium bowl, stir together pancake mix, brown sugar and pumpkin pie spice. Add water and canned pumpkin. Stir with a whisk until blended. Pour slightly less than ¼ cup batter per pancake onto lightly greased and preheated 375°F griddle (medium heat). Cook 1-1 ¼ minutes per side, turning only once. Makes 14, 4-inch pancakes

 Maple Whipped Topping
 Mix 2 tablespoons maple flavor syrup into 1- 8oz Western Family non dairy topping. Serve on pancakes. Sprinkle cinnamon if desired. 

 Make your own Pumpkin Spice. It's quick and easy. Makes 8 teaspoons of Pumpkin Spice 4 Tbs. Ground Cinnamon 2 Tbs. Ground Ginger 1 Tbs. Allspice 1 Tbs. Nutmeg Mix together, store in air tight container. 
  Using the recipe found on the Buttermilk Pancake mix…You can add stir-in mini chocolate chips, nuts, fruits like blueberries, raspberries, chopped apples, bananas. Add up to ¼ cup for every cup of mix used. Do not add to many stir-ins the pancake may fall apart
