Ingredients
• 4 Eggs
• ½ cup biscuit mix
• ¼ cup melted butter
• 1 ½ cups milk
• ¼ tsp. salt
• Dash of pepper
• 1 cup shredded Swiss cheese
• ½ cup ham, cut in small pieces
Place all in blender except ham and cheese. Mix a few seconds to blend well. Pour into a greased 8 inch pie pan. (glass works best). Sprinkle ham and cheese over the top. Press gently below the surface with the back of a spoon. Bake at 350 F for 45 min. Let set for 10 minutes before cutting. Pie forms own crust.
*you can add virtually anything to this recipe.. I've substituted the bacon (Cooked and Crumbled) with ham and added cooked broccoli or asparagus
Easy Fruit With Yogurt Sauce
Serves 12
4 cups -Cut up Assorted Fresh Fruits in to bite size pieces
Yogurt Fruit Sauce
2 cups nonfat plain yogurt
1/2 cup orange juice
1/4 cup honey
1 T grated orange rind
1 grated lemon rind
1 tsp. nutmeg
Whisk together yogurt, orange juice, honey, orange rind, lemon rind and nutmeg. Chill. When ready to Serve pour over Fruit
Tip: Great on pancakes, waffles, or French toast or as a dipping sauce for fruit
